Cut the apple into bite-sized pieces and add them to a pan. Drizzle with maple syrup and cinnamon.
On medium-high heat, fry the apples for a few minutes until they start to caramelize and turn golden.
In a saucepan, mix the oats, plant milk, ground flax, and pinch of salt and cook for a few minutes until thick. Add more or less milk depending on desired consistency.
Once off the heat, add the apple puree, vanilla extract, spices, optional protein powder and half the greek yogurt. Mix well.
Serve in a bowl, top with the rest of the yoghurt, nut butter and the apple toppings.
