Heat the rice following packet directions. Transfer to a large heatproof bowl. Set aside, stirring occasionally, to cool slightly.
Meanwhile, combine the currants and lemon juice in a small bowl. Set aside for 5 mins to soak.
Heat the falafel following packet directions. Break into pieces.
Add the currant mixture to the rice in the bowl with the carrot, rocket and mint. Drizzle with oil. Season and toss to combine.
Divide rice mixture among serving plates. Top with falafel and fetta.
