Pecan Pie Cobbler
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. In a medium bowl, combine the brown sugar, corn syrup, ½ cup melted butter, eggs, vanilla extract, and chopped pecans. Mix until well combined. Pour this mixture into the prepared baking dish.

  3. In a large bowl, whisk together the self-rising flour and granulated sugar. Stir in the milk and 1 cup melted butter until combined. Spoon this batter over the pecan mixture in the baking dish.

  4. Arrange pecan halves on top of the batter for an attractive finish.

  5. Bake the cobbler in the preheated oven for 45-50 minutes, or until the top is golden brown and the filling is bubbly.

  6. Let the cobbler cool for 10-15 minutes before serving. Enjoy it warm, perhaps with a scoop of vanilla ice cream on top for an extra indulgent treat.
