Season beef with salt and pepper
Using the sauté function, heat olive oil and sear beef until browned (in batches if needed). Set aside
Add onion, garlic, ginger, beef stock, curry paste, brown sugar and coconut milk to the pot. Stir to combine
Return beef to the pot and mix well
Cover and cook on high pressure for 45 minutes, then allow a 10 minute natural release
Serve with cooked white rice, a squeeze of lime juice and fresh coriander
Alternative slow cooker method: Sear beef in a pan first, then transfer to slow cooker. Add all remaining ingredients and cook on low for 6-8 hours or high for 4-5 hours
