Spicy Korean Ground Beef With Cucumber Salad
  1. Slice cucumbers and toss with salt. Let sit for 10 minutes to draw out water.

  2. Rinse lightly and squeeze out excess moisture.

  3. Mix with rice vinegar, sugar, sesame oil, soy sauce, garlic, chili flakes, and sesame seeds.

  4. Chill in the fridge while you cook the beef.

  5. Heat a pan over medium-high heat.

  6. Add ground beef and cook until browned, breaking it apart.

  7. Drain excess fat if needed.

  8. Add garlic and ginger, sauté for 1 minute.

  9. Stir in soy sauce, brown sugar, sesame oil, gochujang, and gochugaru.

  10. Simmer for 2–3 minutes until glossy and slightly thickened.

  11. Add rice vinegar and green onions, mix well.

  12. Serve over steamed rice with optional fried egg on top
