Citrus, Ginger & Rosemary Shrub
  1. In a large jar combine the sugar, ginger, cardamom, rosemary, and all citrus peels.

  2. Gently muddle or massage the mixture to release the oils and juices from the citrus and aromatics.

  3. Cover and let sit at room temperature for 24–48 hours, stirring once or twice.

  4. Add the apple cider vinegar and stir to combine.

  5. Let sit for an additional 2–4 hours.

  6. Strain out all solids using a fine mesh strainer.

  7. Transfer the shrub to a clean bottle or jar and store in the refrigerator for up to 2–3 weeks.
