Soak the wood-ear mushroom and bean thread noodles in hot water until softened, then drain and roughly chop them.
Mince the yellow onion.
Combine all the ingredients and mix well.
Spray a 9x9 or 2 loaf pans with non-cooking spray.
Pour the mixture into the pans and spread it evenly.
Bake at 375F for 45 minutes or until cooked.
If any meat liquid starts bubbling to the top from the side of the pan, carefully remove the pan from the oven, use a spoon to remove and discard the liquid, then place the pan back in the oven to continue baking.
