Spicy Sesame Ramen Soup
  1. Cook ramen according to package instructions. Drain and set it aside.

  2. In a small pot or pan, add 1 tbsp of cooking oil over medium heat. Add garlic, ginger, and white parts of green onion. Saute until fragrant.

  3. Add chicken broth, soy sauce, Chinese sesame paste, chili oil, sugar, and white pepper. Bring the soup to a boil. Once boiling, bring it down to a simmer and let it simmer for 2 minutes.

  4. Add cooked ramen noodles. Top with chicken, soft-boiled eggs, green parts of green onion, and sesame seeds. Serve hot and enjoy.

  5. For soy sauce chicken: add oil in a pan and heat over medium heat, cook chicken thigh on both sides until brown. Then add 2 tbsp of soy sauce to the pan, and continue cooking until the chicken is cooked through and both sides are nicely glazed.

  6. For soft boiled eggs: Bring a pot of water to a boil. Slowly add the egg, cover with a lid, and cook for 5 minutes. Once done, transfer the egg to a bowl of ice bath. Let it cool for at least 15 minutes before peeling.
