Self Saucing Chocolate Pudding
  1. For the cake batter: In one bowl, mix together the 225g plain flour, 3 ½ tsp baking powder, 100g caster sugar, 50g cocoa powder and a pinch of salt.

  2. In another bowl, whisk together the 200ml milk, 90g melted unsalted butter, 3 small eggs and 1 tsp vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and mix until just combined.

  4. Pour the batter into a baking dish and smooth the top.

  5. Sprinkle the Cocoa over the batter, then evenly spread over the brown sugar. Pour over the boiling water.

  6. Bake until the top is set and a skewer inserted comes out clean.
