Preheat the oven to 350℉.
Make the cookie dough by creaming together the butter and sugars.227 grams butter, unsalted, 220 grams brown sugar, 150 grams granulated sugar
Beat in egg, vanilla, and sourdough discard until combined.1 egg. 13 grams vanilla extract, 75 grams sourdough discard
Mix in flour, baking soda, and salt until just incorporated. Add flour slowly adding in enough that the dough does not feel sticky to the touch.420 grams all-purpose flour, 6 grams baking soda, 4 grams salt
Fold in chocolate chips and any other mix-ins. You can replace some of the chips with sea salt caramel chips or heath bits.252 grams chocolate chips
Spray a 9x13 pan with non-stick spray.
Cover the bottom of the pan with graham crackers.7 rectangle honey graham crackers
Melt the butter and drizzle overtop.28 grams butter, melted
Add a layer of chocolate bars.6 Hershey's Chocolate Bars
Spread marshmallow fluff on top of the chocolate.208 grams marshmallow fluff
Dump the cookie dough on top and press into the pan.
Make for about 40 minutes or until the cookie is golden brown and cooked through.
Let cool and then slice.
