In a bowl, beat butter and powdered sugar until light & creamy. Mix in vanilla.
Add flour and salt, mixing until a soft dough forms. Fold in cranberries & pistachios.
Shape dough into a log, wrap tightly in plastic wrap, and refrigerate for at least 2 hours.
Preheat oven to 350°F (175°C). Slice dough into rounds and place on a lined baking sheet.
Bake for 10–12 minutes until edges are lightly golden. Cool completely before serving.
