Healthy Mini Pizzas

  2. Preheat oven to 400 degrees

  3. Line a baking sheet with parchment paper

  4. Place cottage cheese and eggs in a bowl, and use a stick blender to blend until smooth

  5. Stir in oat/almond flour, baking powder, and salt until combined. The texture should be thick but scoopable - add a touch more flour if it is too runny

  6. Spoon the batter into 6 small rounds on your baking sheet. Use the back of the spoon to slightly flatten and shape like a mini pizza crust

  7. Spoon a little pizza sauce on each, sprinkle mozzarella, cheddar, and pepperoni evenly over the tops.

  8. Finish with your favourite seasoning, like oregano or chili flakes

  9. Bake for 15-20 minutes until lightly golden and set

  10. Cool slightly and serve
