Melt your butter and preheat your electric non-stick griddle.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and kosher salt.
Add non-fat plain greek yogurt, melted and cooled butter, egg, and milk to the dry ingredients. Stir just until combined.
Scoop out a heaping teaspoon of pancake batter and drop it onto the hot griddle.
After about a minute, place the lollipop stick in the batter just shy of the top of the pancake.
Cook for about 4-5 minutes on the first side, and around 3 minutes on the second side.
Use a small spatula to lift them up a bit, then use the lollipop stick to give them a quick turn.
Serve piled up on a platter with fresh blueberries and maple syrup.
