Whisk flour, baking powder and salt.
In a separate bowl, whisk eggs and sugar vigorously for 20 seconds, then whisk in oil, milk and vanilla. Gently whisk in flour in 2 batches, then gently stir in butter just until incorporated.
Spray a 24 hole mini muffin tin* generously with oil. Will ¾ full with batter (1 tablespoon) then bake 12 minutes at 180°C/350°F (160°C fan).
Wait 2 minutes then bang out of the pan. Toss in cinnamon sugar as soon as they're cool enough to handle – the sugar sticks best when the muffins are still warm. SERVE WARM!!!**
