Chocolate Brownies (GF/V)
  1. Begin by soaking the five dates in hot water until they become soft and mushy.

  2. Next, peel and mash the baked sweet potato until you have one cup and a fourth.

  3. While the sweet potato is still warm, mix in the two tablespoons of dark chocolate chips to allow them to melt.

  4. Add in the tablespoon of vanilla extract and stir well.

  5. Incorporate the two tablespoons of tahini into the mixture.

  6. Then, add three heaping tablespoons of cacao powder along with a generous pinch of salt.

  7. Mix in one cup and a third of oat flour and half a tablespoon of baking soda until combined.

  8. If you like, fold in some walnuts or pecans at this stage.

  9. Pour the batter into a greased loaf pan and sprinkle extra walnuts and chocolate on top if desired.

  10. Bake in a preheated oven at 375°F for about 25 minutes.

  11. Once baked, remove from the oven and finish with a sprinkle of flaky sea salt.
