Add tomatoes, whole garlic, onion, and capsicum to an oven tray with feta in the middle
Coat in olive oil, salt & pepper, and dill
Cook, bake @ 180°C for 40 minutes
Pour stock into saucepan & gently heat
Add cooked veg, feta, and juices into saucepan
Blend until smooth
Add thyme, basil, and sour cream, stir to combine
Simmer for 7 - 10 minutes, check seasoning
Add cream and serve with freshly sliced basil
