Roasted Tomato & Capsicum Soup
  1. Add tomatoes, whole garlic, onion, and capsicum to an oven tray with feta in the middle

  2. Coat in olive oil, salt & pepper, and dill

  3. Cook, bake @ 180°C for 40 minutes

  4. Pour stock into saucepan & gently heat

  5. Add cooked veg, feta, and juices into saucepan

  6. Blend until smooth

  7. Add thyme, basil, and sour cream, stir to combine

  8. Simmer for 7 - 10 minutes, check seasoning

  9. Add cream and serve with freshly sliced basil
