Cook chicken. While chicken cooks, chop the onions, celery, and carrots into small pieces.
Then sauté veg in oil and chicken juices until tender
Stir in butter and flour to make a roux, deglaze with broth
Add about a cup of milk and the seasonings and shredded chicken
For the dumplings, take biscuits from a can, cut them into small pieces, (cut each slice into 6 pieces and roll them into balls).
Finally, put the soup to a gentle simmer. Add the dumpling balls to the soup, cover, and let them cook/steam for 15 minutes.
