Combine 1 pound ground beef and 1 pound ground lamb in a bowl
Add grated onion, Greek yogurt, garlic, oregano, cumin, paprika, rosemary, thyme, salt, black pepper, and extra virgin olive oil
Mix until very well combined
Place meat mixture on parchment paper and cover with another sheet of parchment
Press down and use a rolling pin to spread into a thin layer to the edges
Remove top parchment sheet and fold meat over all the way up
Place on a baking sheet and bake at 400°F for 30 minutes
Drain off fat and juice halfway through cooking
Unroll the kebab and bake for another 5 minutes if more browning is desired
Finish with a squeeze of lemon
Serve on warm pita with yogurt sauce, tomato, onion, fresh parsley
