Make the dressing: In a bowl, whisk together white vinegar, tomato sauce, fat-free mayo, gherkin relish, mustard and both garlic and onion powder until smooth and well combined.
Cook the beef: Brown the lean beef mince with 20g of chopped onion and onion and garlic powder. Once cooked through, set aside to cool.
Assemble the salad: In a meal prep container, layer the dressing at the bottom, followed by the cooked beef, fresh veggies (tomato, cucumber, onion), shredded cheese, pickles, and iceberg lettuce on top.
Serve: When you're ready to eat, pour the salad into a bowl, give it a toss, and enjoy!
