Basic Yellow Cucumber Curry (Meatless & Vegan)

Ingredients:

• 1 yellow cucumber (peeled, seeds scooped, diced)

• ½ onion, chopped

• 1 tomato, chopped

• 1 tsp mustard seeds

• ½ tsp cumin seeds

• ¼ tsp turmeric

• ½ tsp chili powder (or skip for low histamine)

• ½ tsp ground coriander or curry powder

• Salt to taste

• Oil for cooking

• Water or coconut milk for simmering

• Optional: garlic, ginger, fresh cilantro

    Instructions:

  1. Prep cucumber: Peel, remove seeds (if large), and chop.

  2. Temper spices: Heat oil in a pan. Add mustard seeds—when they pop, add cumin seeds.

  3. Sauté aromatics: Add onions, cook until soft. Add garlic/ginger if using.

  4. Add tomato & spices: Stir in tomato, turmeric, coriander, chili powder, and salt. Cook until tomato softens.

  5. Add cucumber: Stir in diced cucumber and a splash of water or coconut milk.

  6. Simmer: Cover and cook until cucumber is tender (10–15 mins).

  7. Finish: Taste and adjust salt/spices. Garnish with cilantro.
