Zesty Orange Scones

Ingredients:

1 ¾ cups all-purpose flour

¼ cup granulated sugar, plus 1 tablespoon for sprinkling (optional)

2 teaspoons baking powder

¼ teaspoon kosher salt

4 tablespoons salted butter, very cold, grated or cubed

½ cup milk (whole milk or 2% works best)

1 large egg

1 teaspoon orange zest (from one medium orange)

½ teaspoon vanilla extract (optional, but lovely!)

For the Glaze (Optional but highly recommended!):

½ cup powdered sugar

1-2 tablespoons fresh orange juice (or milk for a less citrusy glaze)

    Instructions:

  1. Prep Time:

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Dry Mix Magic: 

    In a large bowl, whisk together the flour, granulated sugar, baking powder, and kosher salt.

  3. Butter Up: 

    Add the very cold, grated or cubed butter to the dry ingredients. Use your fingertips or a pastry blender to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining. This is key for flaky scones!

  4. Wet Ingredients Whisk: 

    In a separate small bowl, whisk together the milk, egg, orange zest, and vanilla extract (if using).

  5. Combine Gently: 

    Pour the wet ingredients into the dry ingredients. Mix with a fork or a spatula just until everything is combined and a shaggy dough forms. Be careful not to overmix!

  6. Shape 'Em Up: 

    Turn the dough out onto a lightly floured surface. Gently knead it a few times (just enough to bring it together) and then pat it into a disc about 1 inch thick. You can use a 2-inch round cutter to cut out your scones, or simply cut the disc into 8 wedges.

  7. Bake Away: 

    Place the scones on your prepared baking sheet. If you like a little extra sparkle and a slightly crispier top, sprinkle the remaining tablespoon of granulated sugar over the tops of the scones.

  8. Golden Brown Perfection:

    Bake for 12-15 minutes, or until the tops are golden brown and a wooden skewer inserted into the center comes out clean.

  9. Cool Down: 

Transfer the baked scones to a wire rack to cool slightly.

Glaze It (if desired!): While the scones are cooling, mix the powdered sugar and orange juice (or milk) in a small bowl until smooth. Drizzle the glaze over the warm scones.
