Msg Roast Chicken
  1. Mix the dry rub together

  2. Pat dry the chicken

  3. Salt brine the chicken in the fridge for 2-3 hours

  4. Remove from fridge and brush all over with garlic ghee

  5. Roast at 180 for 1.5 hours or until the core temp is 75 degrees and everything is cooked through

  6. Rest for 15 minutes

  7. Carve, and save the juices and bones for stock / gravy
