Freezing Cakes
  1. Make sure your sponges are baked and cooled fully

  2. I tend to keep the parchment paper on the bottom of each sponge as this helps prevent the sponges sticking

  3. I stack the cooled layers and then wrap completely in a layer of cling film

  4. I then wrap it all again in a second layer of cling film

  5. Finally, I wrap in a layer of foil

  6. To thaw I place the cakes, still wrapped, in the fridge (evening before if you need them in the morning)

  7. I tend to still decorate my sponges when cold, as they will continue to thaw as you decorate

  8. Chilled sponges can often make decorating far easier, especially drip cakes

  9. Thawing in the fridge helps keep the moisture in the sponge, room temp can dry the sponges out more

  10. I freeze all sponges, of all flavours this way

  11. I freeze for 3+ months

  12. How long it takes to thaw depends on how many layers you have frozen so generally taking out the evening before is best

  13. The cakes stay beautifully moist, fluffy and perfect - don't be scared of freezing cakes! It does NOT ruin the cake
