Korean Cold Noodles
  1. Boil noodles for 3 minutes, then drain and rinse thoroughly under cold water until completely chilled.

  2. In a bowl, mix together all sauce ingredients until smooth.

  3. Toss cold noodles in the sauce until evenly coated.

  4. Top with cucumbers, green onions, sesame seeds, carrots, soft boiled egg, and kimchi if using.

  5. Serve immediately.
