Add the prunes to a glass cup and pour enough water over the prunes to cover them entirely. Let them sit overnight in the fridge so the prunes can absorb the water.
The next day, add the soaked prunes to a blender along with the soaking water. Add the beets to the blender and puree until smooth.
Transfer the prune beet puree to a bowl and add the cocoa powder. Mix well. The batter should have a frosting consistency.
For a pudding: Transfer the frosting into tiny glass jars and refrigerate until ready to enjoy.
For squares / fudge: Transfer the batter into silicone molds and freeze for 1 hour or until firm. Pop out squares and enjoy. Store the fudge in the freezer.
