Preheat oven to 400°F
Add beef, tomato paste, garlic, spices, herbs, onion, and zucchini to a bowl
Mix gently
Press onto a sheet pan
Top with olive oil
Cut into 1-inch strips with a knife or spatula
Bake 20–25 minutes until browned
Combine cherry tomatoes, red onion, cucumber, parsley, dill, lemon juice, olive oil, salt, and pepper
Toss and chill in fridge for 10 minutes
Slice the tops off the garlic heads to expose the cloves
Drizzle with olive oil and a pinch of salt
Wrap in foil and roast at 400°F for 45–60 minutes
Add yogurt, mayo, tahini, lemon juice, salt, pepper, paprika, and olive oil to a bowl
Squeeze in all the roasted garlic
Mix until smooth and creamy
Add cold water a little at a time until desired consistency
Warm your naan or pita
Spread a layer of the roasted garlic tahini sauce
Add the kofta strips
Spoon the salad on top
Drizzle more sauce
Fold and enjoy
