Preheat your oven to 400°F (200°C). Prick each sweet potato several times with a fork, then place them on a baking sheet. Bake for 45-60 minutes or until tender.
While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
Stir in the red bell pepper, ground cumin, paprika, chili powder, salt, and pepper. Cook for another 5 minutes.
Add the black beans and corn kernels to the mixture. Stir well and cook until everything is heated through.
Once the sweet potatoes are done baking, remove them from the oven and let them cool slightly. Slice each sweet potato in half lengthwise and gently scoop out some of the flesh to create room for the turkey mixture.
Spoon the turkey mixture into each sweet potato half. Top with shredded cheese, then return to the oven for 5 minutes, or until the cheese has melted.
Remove from the oven, garnish with chopped cilantro, and add any optional toppings you desire.
