Homemade Dhal
  1. Soak lentils, 1 hour, lots of water

  2. Using a heavy based pot (with lid), heat ghee over high heat. When hot add chillis and cook for 1 minute

  3. Add onion and carrot, fry until softened

  4. Lower heat to medium, add garlic, ginger, and curry leaves. Cook 1 minute until fragrant

  5. Add tomatoes and cumin, cook until tomatoes start to break down and thicken

  6. Add lentils, stock, turmeric, salt. Stir, bring to simmer, cover and reduce heat to low. Simmer for 1 hour

  7. Remove lid and simmer for 45 minutes, stirring 2 - 3 times. The dhal is ready when its consistency is like porridge

  8. Stir through garam masala, check salt
