Preheat the oven to 350°F.
In a large bowl, combine cooked chicken, garlic, parsley, chicken stock, cream of chicken soup, cooked rice, Italian dressing mix, salt, and pepper.
Transfer the mixture to a baking dish.
In a saucepan, melt butter and cream cheese together until smooth.
Pour the butter and cream cheese mixture over the chicken and rice in the baking dish.
Top with Colby jack cheese.
Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly.
