Bring a pot of water to the boil and cook the noodles until al dente then drain.
Heat oil in a wok or pan over hight heat and add in the mince meat. Cook, breaking with your spatula or wooden spoon until cooked through and slightly crisp.
Add the onion and garlic, and continue to cook until the onions have softened a little and are starting to brown.
Toss through the leafy greens until just wilted and season with salt and pepper.
Add in the cooked noodles along with light soy sauce, dark soy sauce, sesame oil, honey and chilli oil.
Toss until well combined then taste and season to your liking.
