Protein Cinnamon Raisin Bagels
  1. Preheat your oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.

  2. In a small mixing bowl, combine the flour, baking powder, salt, ground cinnamon, and coconut sugar. Whisk until evenly combined.

  3. Place Greek yogurt in a large mixing bowl and add flour mixture on top. Mix with a rubber spatula until a dough forms. Use your hands to knead the dough in the bowl for a minute or two until it's smooth and pliable. (dough will be sticky, that's ok- just flour your hands to make the dough workable)

  4. Fold in the raisins, kneading gently to evenly distribute them throughout the dough.

  5. Roll the dough into a large ball and cut into four equal portions. Roll each portion into a log, about 8 inches long, then connect the two ends to form a bagel shape.

  6. Place the bagels on the prepared baking sheet. Brush each one with egg wash (or a light coating of oil) to create a golden brown finish during baking.

  7. Bake the bagels in the preheated oven for 25–28 minutes, or until golden brown and firm to the touch.

  8. Let the bagels cool slightly on the baking sheet before serving. Enjoy warm or toasted with cream cheese!
