Pour red enchilada sauce, tomatillo salsa, fire roasted tomatoes, and taco seasoning over the chicken
Cover and bake in the oven until chicken is cooked through
Shred or finely chop the cooked chicken and mix back into the sauce
Blend cottage cheese, cheddar, milk, and American cheese to make cheese sauce
Pour cheese sauce over the chicken mixture and stir to combine
Add slightly undercooked pasta in rounds, mixing until completely combined
Top with mozzarella cheese
Broil until cheese is browned and serve
