Add ginger and water to a 2 quart pot
Bring to boil then turn off heat, let steep for 20 minutes
While ginger is steeping, add lemon juice, apple cider vinegar, maple syrup, and Celtic sea salt to a large pitcher or 64 oz jar
Once ginger is done steeping, strain out ginger root and add the water to the pitcher/jar
Serve with fresh mint leaves and top with sparkling water
