Preheat your oven to 375°F (190°C).
Slice the top off the head of garlic, drizzle with olive oil, and wrap it in foil. Roast for 30-35 minutes, or until soft and caramelized.
While the garlic is roasting, arrange the baguette slices on a baking sheet. Brush lightly with olive oil and toast in the oven for 5-7 minutes, or until golden and crispy.
Squeeze the roasted garlic cloves out of their skins and mash them into a paste.
In a small bowl, mix the roasted garlic paste with ricotta cheese, salt, and pepper until smooth.
Spread the garlic-ricotta mixture generously onto each toasted baguette slice.
Drizzle with truffle oil and garnish with fresh parsley. Serve immediately.
