Preheat your oven to 350°F.
Blend or grate the zucchini and squeeze out all excess moisture.
Put the zucchini in a bowl with the remaining ingredients and mix well.
Scoop a few portions onto a parchment-lined baking sheet, spreading them into thin, taco shell-sized circles.
