Tomato Feta Pasta
  1. Preheat oven to 400°F. In a baking dish, combine shallot, garlic, tomatoes, and all but 1 Tbsp. olive oil. Season with salt and pepper flakes.

  2. Place block of feta in the center of the dish. Drizzle with reserved olive oil. Scatter thyme sprigs over the top.

  3. Bake for 40–45 minutes, until tomatoes are bursting and feta is golden.

  4. Cook pasta according to package instructions. Reserve ½ cup pasta water before draining.

  5. Remove thyme from the baking dish. Add cooked pasta, reserved pasta water, and lemon zest. Stir until creamy.

  6. Garnish with fresh basil and serve hot.
