Pork Fried Rice
  1. Brown the pork well. Heat a pan pretty hot with a little oil. Add pork, season lightly with salt and pepper, and let it sit to get some browning before stirring. Cook through, then remove.

  2. Scramble eggs. Quickly scramble the eggs in the same pan, remove and set aside.

  3. Build the base. Add a bit more oil if needed. Toss in onion, cook 2–3 minutes. Add garlic + ginger, cook about 30 seconds.

  4. Veggies. Add carrots/broccoli first (they take longer), then softer stuff like peas and peppers. Cook until just tender.

  5. Add your cold rice and break it up really well. Let it sit 20-30 seconds between stirs so it actually fries slightly instead of steaming.

  6. Drizzle soy sauce, oyster sauce, and hoisin around the pan (not all in one spot). Toss well.

  7. Add pork and eggs back in. Toss everything. Drizzle sesame oil at the end.

  8. Add green onions + a pinch of white pepper. Taste and adjust—more soy sauce if needed.
