Healthier Gingerbread Loaf
  1. Preheat oven to 350F and grease a loaf pan with oil or line with parchment

  2. In a large mixing bowl, whisk the wet ingredients - eggs, molasses, almond butter, coconut sugar, coconut oil and vanilla - until combined

  3. Whisk in the dry ingredients - almond flour, oat flour, baking soda, baking powder, cinnamon, ginger, allspice and salt - until fully incorporated

  4. Transfer batter to the prepared pan

  5. Bake for 30-40 minutes until a toothpick inserted into the center comes out mostly clean

  6. Remove and let cool completely before frosting

  7. Make the frosting by placing all ingredients in a mixing bowl

  8. Use a hand mixer to beat on medium speed for a few minutes until light and fluffy

  9. Spread the frosting over the top of the loaf, slice and enjoy
