Preheat oven to 400F
Add 4 chicken leg quarters to a bowl and drizzle with 1 tbsp olive oil
Season chicken with salt, pepper, lemon zest and juice, 1 tbsp garlic powder, 1 tbsp oregano, ½ tsp cayenne pepper, 1 tbsp sweet paprika, 2 tbsp tomato paste, and 4 minced garlic cloves
Mix chicken well and marinate for at least 2 hours (overnight is best)
Cut sweet potatoes into smaller wedges and place at the bottom of an oven-safe dish or pan
Add broccoli florets and 1 thinly sliced shallot on top of sweet potatoes
Drizzle veggies with olive oil and season with salt, ½ tbsp oregano, and ½ tbsp garlic powder
Place marinated chicken on top of the veggies and add any leftover marinade
Bake at 400F for 40 minutes
Turn off heat and let the pan sit in the oven for 20-30 minutes without heat to soften veggies and enhance flavors
While cooking, prepare sauce by mixing 3 tbsp mayo with 1 tbsp tomato paste, 1 minced garlic clove, lemon zest and juice, and a pinch of salt
Remove pan from oven, plate up, top with fresh parsley and sauce, and serve
