Combine oats, cacao powder, chia seeds, and sea salt in a bowl or jar
Add 3 tbsp coffee, ¾ cup almond milk, 1 tbsp maple syrup, and a dash of vanilla extract
Mix well and refrigerate overnight
In a separate bowl, combine ½ cup plain greek yogurt, 2 tbsp coffee, 1 tbsp maple syrup, and a dash of vanilla extract to make the mascarpone topping
Top the overnight oats with the mascarpone mixture before serving
Adjust maple syrup to your preferred sweetness
