Heat oven to 350 degrees. Slice Italian loaf in half lengthwise and place on a baking sheet, cut side up.
Add cream cheese, sour cream, half the Colby jack cheese, all the sharp cheddar cheese, bacon (reserve some for garnish), pickled jalapenos, fresh jalapenos, green onions, chives, garlic, and a couple large pinches of salt and pepper to a large bowl. Mix until well combined.
Spread the jalapeno mixture in an even layer across the cut side of each piece of bread. Top with remaining shredded cheese. Add a few slices of fresh jalapeno if you like.
Bake for 25-30 minutes or until the cheese on top is melted and starting to turn golden brown. Broil for 1-2 minutes if desired.
Let sit for about 5 minutes to cool. Slice and garnish with bacon, green onions, and chives. Enjoy!
