Mandarin Orange Cake Squares
  1. Cream together butter and sugar until light and fluffy, approx 2 mins

  2. Whisk in 2 eggs

  3. Whisk in milk, orange juice and zest

  4. Then, whisk in flour and baking powder

  5. Transfer to 8 inch square baking tray and tap a few times to dislodge excess air bubbles. Bake 160C for 32 - 35 mins or lightly orange brown

  6. 5 mins after it's out, make the orange drizzle and pour evenly over the top of the cake to absorb

  7. After the cake has completely cool, prepare the orange icing and pour over. Do not make the orange icing in advance as it will harden! You can finish off with some orange zest
