✔️Muffin Batter 2 whole eggs (large) 1 cup sugar (200g) 1 cup fresh milk (240ml) ½ cup canola oil (120ml) 1 tsp vanilla extract (5ml) 2 cups all purpose flour (270g) ½ cup unsweetened cocoa powder (50g) 1 tsp baking powder (5g) 1 tsp baking soda (5g) ¼ tsp salt (1g) ¾ choco chips (120g) + extra for topping ✔️Chocolate Fudge Filling ½ cup white sugar (100g) ¼ cup unsweetened cocoa powder (25g) 1 tbsp cornstarch (8g) ¼ tsp salt (1g) 1 cup fresh milk (240ml) Procedure: 1. In a sauce pan, prepare the choco fudge by combining the sugar, cocoa, cornstarch, salt and milk. Stir until cocoa powder dissolves. Cook over low heat and continuously stir until smooth and thickened. Set aside and Let it cool. 2. In a mixing bowl, prepare the batter by combining the eggs, sugar, milk, oil and vanilla. Whisk until just incorporated. Sift and add-in together in the flour, cocoa powder, baking powder, baking soda and salt. Mix until well combined. Add-in the chocolate chips then mix until combined. 3. Fill in the muffin liners with batter about ⅓ full. Add-in about 1-2 tbsp of choco fudge in the center. Fill top with the remaing batter. Top it with chocolate chips. This yields 12 pieces on standard muffin tulip liners with size 5cm(base) & 8cm (height). 4. Bake in a pre-heated oven @180°C for about 25 mins. Baking time may vary on the type of oven and size of the muffin, so alter accordingly. 5. Remove the muffins from the oven then allow it to cool. Serve and enjoy. Looking for more recipes?
