In a separate bowl, mix the wet ingredients: honey, coconut oil, peanut butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Line a baking sheet with parchment paper and spread the granola mixture evenly.
Bake for 15-20 minutes, stirring halfway, until the granola is lightly golden brown.
Remove from oven and let cool completely before serving.
