Sticky Toffee Pudding
  1. Preheat your oven to 170°C-150°C Fan. Grease a large casserole dish with butter. (I made a double batch in this video hence why you see smaller dishes used). Add the boiling water and two Teabags together into a jug and allow to sit for 5-6 minutes. Remove the Teabags and add the dates. Blitz with a hand blender until completely smooth.

  2. Beat the butter and sugar together using a stand mixer until light and fluffy. Add the rest of the cake ingredients together until a smooth batter has formed. Bake for 45-50 minutes or until when a wooden skewer is inserted it comes out clean.

  3. To make the sauce ,Infuse the cream with the Assam Teabags in a saucepan on a low heat for 15 minutes. Discard the Teabags. Heat together the dark brown sugar, golden syrup and butter in another saucepan on a medium heat until completely melted and bubbling.
