Apricot Puree
  1. Place the dried apricots in a tall glass or blender cup. Cover with water and soak for 20 to 30 minutes. (If you can find fresh apricots, follow the Instructions for Pear Purée to prepare them that way).

  2. Add the apricots and half of the soaking water to a blender. Purée until very smooth, adding additional soaking water and scraping down the sides as needed.

  3. Transfer to a small bowl and serve immediately or store until ready to use. Store in an airtight container in the refrigerator for 3 to 5 days or in the freezer for 4 to 6 months.

Apricots are nutritious, sweet fruits to offer your little one that are full of vitamin A and vitamin C. However, fresh apricots are only in season a short while, and canned varieties can be hard to find and might contain sugar or heavy syrup. Dried apricots make a great anytime substitute.
