Garlic Soy Chicken
  1. Season chicken with salt and pepper on both sides and lightly dust skin with cornstarch.

  2. Heat pan on medium heat with oil then pan-fry chicken skin side down for 6-8 minutes until golden brown and crispy. Cook other side for a few more minutes or until chicken reaches 165°F.

  3. Remove chicken and add garlic, ginger, sake, mirin, and sugar to the pan.

  4. Simmer on medium low heat for a few minutes until the sugar is dissolved making sure to scrape off any chicken bits(fond) left in the pan.

  5. Add soy sauce and cornstarch slurry to thicken the sauce.

  6. Add back the chicken and coat it in the garlic sauce.

  7. Serve with rice and garnish with toasted sesame seeds.
