Oatmeal-raisin Breakfast Bars Are Better Than The Cookies
  1. Preheat oven to 350°F. Line bottom and sides of a 9-inch-square baking pan with parchment paper, leaving a 1-inch overhang on all sides. Lightly coat with cooking spray.

  2. Whisk oats, all-purpose flour, whole-wheat flour, cinnamon, baking soda and salt together in a large bowl.

  3. Whisk eggs, applesauce, yogurt, honey and vanilla together in a medium bowl until combined. Add the egg mixture to the flour mixture; stir until just combined. Fold in raisins until evenly distributed. Pour the batter into the prepared pan; smooth the top.

  4. Bake until set and a wooden pick inserted in the center comes out clean, about 25 minutes. Let cool in the pan on a wire rack for 15 minutes.

  5. Using the parchment overhangs as handles, remove the bars from the pan. Cut into 9 (2 ¾-inch-square) bars. Serve warm or at room temperature. Additional reporting by Carrie Myers, M.S. and Linda Frahm
