In a large pot, warm up the oil over medium-high heat. Add the onion and a pinch of salt and cook until they start to look golden in some spots, 8 to 10 minutes.
Sprinkle in the pepper flakes (if using) and oregano and cook for another minute more. Stir in the crushed tomatoes and passata and reduce the heat to medium. Grab a Microplane or the smallest side of your box grater and grate the garlic cloves right into the pot as it starts to simmer.
Stir in the nooch and wine (if using) and let this simmer for 5 minutes so that the flavors can really get acquainted. Now taste and add salt or whatever you think it needs. You can let this stay warm on the stove for a while, but this is all done.
