Frank Proto's Fluffy Pancakes
  1. Mix dry ingredients (flour, sugar, salt, baking powder, and baking soda) together with a whisk to ensure no pockets of any single ingredient

  2. In a separate bowl, combine wet ingredients (milk, vegetable oil, vanilla, apple cider vinegar, and eggs) and whisk until well combined with broken yolks

  3. Fold wet ingredients into dry ingredients gently, mixing only 20-25 times until just combined; leave lumps intact

  4. Heat griddle and add a generous amount of salted whipped butter, spreading it around

  5. Using a berry spoon or similar utensil, scoop batter onto the griddle without stirring the remaining batter

  6. Wait for bubbles to pop through the surface of the pancakes before flipping

  7. Flip pancakes away from yourself using a plastic spatula with one quick motion

  8. Do not press down on pancakes; let them cook undisturbed

  9. Pancakes are done when they spring back when pressed

  10. Transfer to plate and top with salted whipped butter and maple syrup
